Chilli Con Carne Recipe

Easy chilli con carne recipe

Easy, quick and packed with flavour, this classic meaty chilli is great served with rice, pasta, or even jacket potatoes

Ingredients

* 2 tbsp vegetable oil * 1 onion, finely chopped * 2 garlic cloves, crushed * 500g beef mince * 1 tbsp tomato purée * 1 red pepper, deseeded and finely chopped * 1 green pepper, deseeded and finely chopped * 2 x 400g cans chopped tomatoes * 2 tbsp plain flour * 1 tsp ground cumin * 1 tsp ground paprika * 1 tsp dried mixed herbs * 1 beef stock cube * 400g can kidney beans, drained and rinsed

Method

1. Heat the oil in a large pan and fry the onion and garlic for 5 mins, or until softened. Crumble in the mince and cook until browned. Stir in the tomato purée and cook for a minute more. 2. Add the peppers, tomatoes, flour, cumin, paprika, mixed herbs and crumble in the stock cube. Pour in 150ml hot water. Cover and simmer for 20 mins, or until the sauce has thickened. 3. Stir the kidney beans, bring back to the boil and simmer for 10 mins more. Serve with rice, pasta, or jacket potatoes.

Tips

* For a spicier chilli, add a chopped green chilli or some chilli flakes to the pan with the onion and garlic. * If you don't have any red or green peppers, you can use a large chopped yellow pepper instead. * You can add other vegetables to this chilli, such as chopped carrots or celery. * If you don't have any beef mince, you can use lamb mince or pork mince instead. * This chilli can be made ahead and reheated when you're ready to serve.
